Honey has been known for its medicinal properties for thousands of years in Ayurvedic Medicine, but now, there are several scientific studies that shows the great properties of this sweet remedy. Raw honey, unpasteurized and unfiltered, has many properties that can help the body get rid of its ailments. Honey in its raw form contains enzymes and other active ingredients that help in the healing process. Clinical studies have shown that honey kills seven species of bacteria that most commonly produce wound infections. An article in the British Journal of Surgery compared the topic use of honey with silver sulfadiazine (SSD) - one of the most widely-used treatment for burns - and 91% of the burns treated with honey were infection free whitin 7 days, while only 7% of the burns treated with SSD were infection free within the same period. Raw honey can provide a moist, fast healing process reducing inflammation, infection and edema.
All types of raw honey can do this job in healing burn wounds, however there are two types of honey, that are specially formulated medicinal honeys. They are: MediHoney, an Australian product, and Manuka Honey, a New Zealand product. Both are derived from bees which forage the flowers of manuka shrub, Leptospermum scoparium, also known as tea trees. So these best wound healing honeys are rated UMF (unique manuka factor) 10 or greater. In addition to burns, raw these therepeutic raw honey have been successfully used in the treatment of abrasions, eczema, psoriasis, surgical wounds and bacterial infection (including MRSA, Methicilin Resistant Staphylococcus Aureus). MRSA is a bacterium resistant to multiple drugs, including the penicilins antibiotics (methicillin, dicloxacillin, nafcillin, oxacillin...). This makes the bacterial infection much more difficult to treat, therefore, more dangerous.

Not all manuka honey is the same, though you are right to point out the importance of the UMF rating. However for use on wounds it is important to use a proper medical grade honey. These are processed, tested and checked to a much higher standard, and also have been sterilised.
